In a night, a guest came to their restaurant to eat water noodle soup but water for noodle soup is at an end, at this time, only there was amount of noodle and because of respecting that guest, the boss took noodle to roll with beef and fennel and then he brought it for the guest to eat with sauce. However, it was very unpredictable. The guest felt it so well and since that the boss of this restaurant decided to make “pho cuon” to sell especially this dish used bare beef to make the rolled noodle soup.
After a long time, this dish becomes very famous. It not only attracts Vietnamese but also foreigners. If you have chance to go to Ngu Xa street on Sunday afternoon, you can see busy scenes of people eating the pho cuon. At this time, the bosses of any restaurant have to say that the selling speed is highest. All people in the restaurant must work incessantly to serve guest.
Pho cuon is made from three main ingredients such as noble, bare noodle, and fennel. It is the same as a harmonious combination of green fennel which means hope, white noodle which is special product of nature, and beef which is keep strong and attractive flavors. Meanwhile, the flavor of fennel is noted much, it make the dish more delicious, the flavor of fennel is cold as peppermint and has pure fragrance.
